We called Emtek and they do not have a pocket door latch that would accommodate a 2-1/2" thick door.
However, Cavity Slides does.
The thick door kit is special order from New Zealand and the lead time is about 10 weeks. The extra charge is about $200 for just the kit. So you are looking at around $700 for the pocket door latch and the thick door kit.
