You simply remove the two screws on the inside portion of the lock that are located on the rosette. This will remove the lock itself. Then the latchbolt can be removed. If it's a drive-in latchbolt it will simply pull out and if it's a mortise latchbolt then remove the two screws on the faceplate and pull it out.
