I think you're referring to a living finish (open) as opposed to a lacquer finish (coated). A lacquer finish will not change over time whereas a living finish refers to a finish that will change over time and with use. An unlaquered finish means the base metal is free to age as it react with oxygen in the air and oils on our hands.
